Not that I would do this in my 13 year old, 200,000 mile Odyssey...or any Odyssey for that matter....

But if I were say going 110 mph and hit the D3 button on the transmission selector, what would happen? I have noticed last gen Pilots had this feature as well. I figured the car was governed within the top speed in 3rd gear anyway.

Now theoretically speaking, with stock sized tires, the 2005 Odyssey is geared for a top speed of about 113mph in third at the 6300rpm redline, so you wouldn't be at risk of an over-rev if that's what you're worried about. But since you're going to be pretty close to Vmax in 3rd, it might lock you out of 3rd depending upon how conservatively they've programmed the transmission logic.

100mph and above, D3 is locked out.
Confirmed @ 115mph.

ok, if you're talking about your 2011(?) Ody with a 5AT, the gear ratios, final drive, and rolling circumference of the tires are all different from an '05-'10 model with 5AT and 16" tires. BUT, the theoretical max speed in 3rd (@6300rpm) in your Ody is slightly higher at 114.4mph so it all sort of washes out, so your info is still useful in this case.

Also, your 90mph@5000rpm observation checks out with the gear ratio analysis spreadsheet that I have. To be more precise, my spreadsheet shows 4958rpm @ 90mph in 3rd.

I figured there was software in place to protect the engine, but I thought I'd ask. I do find it funny that you can lock in 3rd gear, but not 4th....say if you were towing something and were trying to stop the 4th-5th hunting.
